Beef Loaf
 
 ¾ c. finely crushed corn chips
¾ c. plain bread crumbs
1 c. milk
1½ lbs. lean ground beef
2 c. salsa, divided
2 eggs, beaten
2 Tbsp. chopped parsley (or cilantro)

Soak corn chips and bread crumbs in milk till soft; combine with beef, 1 c. salsa, and eggs. Pack into a loaf pan or shape into a loaf and place in a shallow baking dish. Place partially fried bacon strips across top of loaf, if desired. Combine remaining salsa and parsley (or cilantro) and spoon over meat loaf. Bake in 350-degree oven for 1 hour. Serve with additional salsa, if desired.
