Irish Apple Cake
 

1 c sugar
1 egg, beaten
4 Granny Smith apples, cored, peeled and diced
1/4 c chopped pecans
1 t vanilla
1/2 t baking powder
1/2 t baking soda
1/2 t salt
1/2 t cinnamon
1/2 t nutmeg
1 c all purpose flour
1/2 stick butter

Preparation

Preheat dutch oven, wrap outside of 10" round springform cake pan with aluminum foil and grease pan generously.

In bowl, cream butter and sugar together until light and fluffy. Add egg apples, nuts and vanilla and stir well. Mix in dry ingredients and pour batter in cake pan. Place in dutch oven. Bake until cake is lightly browned and knike or skewer comes out clean. (The recipe I adapted said 45 min, but it was more like 1 hr 15 min.) This would supposedly be better served with whipped cream or vanilla ice cream, but as it disappeared so fast that apparently isn't necessary.
