Cowboy Style Peach Cobbler
 
2 sticks butter

Batter ingredients:
2 c sugar
2 c flour
1 T baking powder
1 t salt
Syrup from Canned Peaches
1 egg

Filling ingredients:
2 Large (29 oz) cans Sliced Peaches
in light syrup
1 cup dark brown sugar

Other:
Ground Cinnamon
Mix batter ingredients until smooth. Mix filling ingredients. Melt better in 12” dutch oven. Pour batter into dutch oven, without stirring. Spoon filling evenly over batter mix, again without stirring. Cook about 40 minutes with one ring of coals below and one on top, until done (nicely browned on top and knife or toothpick should come out clean). Once batter mix rises, sprinkle generously with ground cinnamon.
