Brown Bread 
 
½ cup warm water
5 tsp. yeast
3 Tablespoons butter
2 cups warm milk
2 tsp. salt
¾ cup oats
6 ½ cups bread flour
½ cup whole wheat flour
6 Tablespoons cornmeal
¼ cup cocoa
2/3 cup molasses
1/3 cup honey


In small bowl, soften yeast in ½ cup warm water for about 10 min. Slowly warm the milk in a small saucepan. Mix butter into warm milk until melted.

In a large bowl, mix dry ingredients. In another bowl, stir together molasses and honey; add in yeast mixture and butter and milk mixture. Mix well with dry ingredients, cover, and let rise in a warm place till double, about 1 hour. Turn out onto floured surface and knead about 5 min.
Shape into 2 loaves, or divide into thirds, roll each third of dough into a long roll and braid, then place in a circle in a Dutch oven. Cover and let rise again, 30-45 min. or till double. Bake at 350 degrees till browned and bread sounds hollow when tapped.
